In a pot, combine rice and water to boil rice. Bring to rolling boil.
Let boil for 5 mins, stirring every minute so there are no clumps.
After 5 minutes, there should still be plenty of water, stir one last time and turn the stove OFF.
Cover the pot of rice with the lid. Do not let any steam out. Let it continue to cook covered for 30 minutes.
While the rice is cooking, in a separate bowl, combine the chili powder, cumin powder, paprika, garlic, and cayenne.
Stir well.
Next open the can(s) of chicken. Drain all the water and add the chicken to the seasoning bowls.
Mix well so the chicken is well coating in seasonings.
Next open and drain the corn and olives. Add to chicken bowl.
Lastly, open the canned tomatoes. Only drain about half of the water and add to the chicken mix.
Stir ingredients together well.
Once rice has finished cooking, all water should be absorbed into rice and rice should be light and fluffy.
Spoon the rice into a bowl and top with chicken and veggie mix.
Top with green onions and enjoy.
