In a large bowl, combine active starter and warm water. (Do not use city water, it contains chlorine.)
Stir well.
Add Olive oil and salt.
Mix well.
Add flour and mix together well til forms a dough ball, may still be slightly sticky.
Place a towel or shower cap over bowl and let rise for 12-24 hours, until the dough has doubled in size.
Once the dough has doubled in size, add flour as needed until dough no longer sticks to your hand. It may need nothing if you live in a desert or a cup or two if you live in a cold wet climate.
Mix together until you can form a nice doughball that doesn't stick to your hands.
Divide dough into as many pizza crusts as you would like, (if everyone wants their own small one, or the family will have one large one)
Once you have your doughball divided into new smaller dough balls, place on oiled pan, cover with tea towel, and let rest / rise for 30 -60 minutes.
Preheat oven to 450ºF
Once your doughballs have risen, flour a large flat surface.
Use a rolling pan to roll your crusts to your desired thickness, if you like thick crusts or thin,
Place your crusts on pizza pans and bake for 5-10 min, until slightly brown.
The crusts will not be fully cooked but are ready to add your toppings.
Once your toppings are added, place back into the oven for 15-20 more minutes to finish cooking the crust and toppings.
