Instructions:
Note : Time only includes prep and baking, not rising which takes 18-20 hours.
In a large bowl, combine active starter and warm water. (Do not use city water, it contains chlorine.)
Stir well.
Add honey, olive oil, and salt.
Stir well.
Add flour slowly, once cup at a time.
Mix well with a knife, until you need to mix with your hands until a ball of sticky dough forms.
Place dough ball back in bowl
Cover with plastic or cloth and place in warm area for 18-20 hours, until doubled.
Next day, oil a baking pan with cooking spray.
Divide dough into 2" dough balls.
Feeds 5 = 9 dough balls in a 9x9 pan ,
Feeds 10 = 12 dough balls in a 9x 13 pan
Feeds 15 = 18 dough balls (2) 9x9 pans
Feeds 20 = 24 dough balls in (2) 9x13 pans
Place doughballs in oiled pan and cover with a cloth and let rise for 2 hours.
Once balls have risen 50%, preheat oven to 375ºF
Remove cloth from rolls.
Brush with a little olive oil.
Bake for 20-30 min, until golden brown
