Sourdough Bread

Instructions:

Note : Time only includes prep and baking, not rising which takes 18-24 hours.

No stretch and folds, No hours of kneading. Easy peasy Sourdough bread.

These instructions are for a loaf pan but similar to make boule.

1. In a large bowl, combine active starter, salt, and warm water. (Do not use city water, it contains chlorine.)

2. Stir well.

3. Add the flour and stir well until forms a wet doughball.

4. Cover with a shower cap or towel and set aside to let rise for 18-24 hours (or until doubled).

5. Place 2 TB of uncooked rice in the bottom of your loaf pan. (Prevents bottom from burning)

6. Line the loaf pan with parchment paper.

7. Once your dough has doubled, punch it down and mix it well.

8. Scoop your dough directly into your parchment lined loaf pan.

9. Score loaf as desired

10. Cover and let rise for 60-90 min.

11. Start oven to 425ºF

12. Cover with upside down loaf pan (used as a lid), imeediately put it in the oven, before it's preheated and bake for 60 min.

I like my crust moist. If you like a harder crust, bake for 45 min covered, and 15 uncovered.

13. Once golden brown, remove from oven and pan.

14. Let cool for 30 min with lid on, and 30 min with lid off, then slice. Keep an eye on it, if you live in a humid climate, you don't want too much condensation accumulating so may need to remove from loaf pan after initial 30 min cool

15. Enjoy your homemade sourdough bread from scratch.
