No stretch and folds, No hours of kneading. Easy peasy Sourdough bread.
These instructions are for a loaf pan but similar to make boule.
In a large bowl, combine active starter, salt, and warm water. (Do not use city water, it contains chlorine.)
Stir well.
Add the flour and stir well until forms a wet doughball.
Cover with a shower cap or towel and set aside to let rise for 18-24 hours (or until doubled).
Place 1 TB of uncooked rice in the bottom of your loaf pan. (Prevents bottom from burning)
Line the loaf pan with parchment paper.
Once your dough has doubled, punch it down and mix it well.
Scoop your dough directly into your parchment lined loaf pan.
Score loaf as desired
Cover and let rise for 60-90 min.
Preheat oven to 425ºF
Cover with upside down loaf pan (used as a lid) and bake for 60 min.
I like my crust moist. If you like a harder crust, bake for 45 min covered, and 15 uncovered.
Once golden brown, remove from oven and pan.
Let cool for 60 min before cutting.
Enjoy your homemade sourdough bread from scratch.
