In medium pan, combine water to rehydrate, dehydrated bell peppers and dry onions.
Cook on vegetables on medium low for about 10-15 minutes. Drain off any excess water.
In separate bowl, combine egg powder and water for egg powder. Mix well.
In a second clean medium size pan, oil or spray non-stick spray on the pan.
Once pan is hot, use a 1/4 c measuring cup to pour egg mix into pan like a pancake.
Use a hot pad to grab the handle of the pan and rotate the pan around to make sure the egg is spread out, nice and round.
Cook for 3-5 minutes until underside starts to brown.
Flip like a pancake to cook the other side.
Cook for an additional 3-5 minutes.
On one side of the circle, add the cooked bell peppers and onions.
Fold the empty side of the omelette in half, to sandwich the vegetables inside.
Now that you have a nice half circle, flip it one more time to cook the other side.
While still on the stove, add cheese and green onions.
Cover and let cook for 1-2 more minutes to let the cheese melt.
Remove from pan and place on plate.
