In a small glass, combine the freeze dried cheese and water for freeze dried cheese. Stir together and let rehydrated for 10 minutes.
In medium bowl, combine sour cream powder with water for sour cream powder. Mix well.
Add dried onions, cumin, garlic, chili powder, salt, and pepper to sour cream. Mix well.
In same bowl, add can(s) of chili to sour cream mix.
Open and drain diced potatoes. Add to potatoes to main chili mix bowl.
Add cooked egg whites to chili. If you add egg whites, it's a potato salad, which is a salad. So score!
Drain any leftover water from the cheese and add cheese to potato chili salad.
Stir everything together really well with large spoon.
Serve in a bowl and top with green onions
